Spiced Sultana Muffins

2 cups plain flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ teaspoon ground mixed spices
1 cup brown sugar
1 cup sultanas
125 g butter, melted
1 egg, lightly beaten
1 cup milk
(I've added a little ground black pepper)

Sift flour, baking powder and spices into a bowl. Add brown sugar and sultanas.
Combine melted butter, egg and milk and stir into dry ingredients. Mix until combined.
Spoon into 12 buttered muffin pans to three quarters full. Bake in a hot oven (200º C) for 20 minutes or golden.
Serve warm with butter. Makes 12.

Yoghurt Bran Muffins

1 cup plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
¼ cup caster sugar
¾ cup bran
½ cup sultanas
½ cup natural yoghurt
1 egg, lightly beaten
3 tablespoons butter and
1 tablespoon honey, melted together

Sift flour, baking powder and bicarbonate of soda together.
Add sugar, bran, sultanas. Combine yoghurt, egg, butter and honey and blend into dry ingredients.
Spoon mixture evenly into 12 buttered muffin pans to three-quarters full.
Bake in a hot oven (200º C) for 10 to 15 minutes or until muffins are golden brown. Serve hot or cold with butter.

Sunshine Muffins

2 cups plain flour (I took 1 cup plain, 1 cup wholemeal flour)
2 teaspoons baking powder
½ teaspoon mixed spice
½ cup sugar
1 cup crushed pineapple, with juice
60 g butter, melted
1 egg, lightly beaten
½ cup natural yoghurt
½ cup milk
½ cup chopped pistachio nuts (I didn't have them, used raw cashewnuts instead)
(I've added a little ground black pepper)

Sift flour, baking powder and mixed spice into a bowl (don't sift the wholemeal flour). Stir in sugar. Combine pineapple with juice, butter, egg, yoghurt and milk. Add to mixture and stir until just combined.
Spoon mixture into 12 buttered muffin pans to three-quarters full. Sprinkle pistachio nuts over. Bake in hot oven (200º C) for 15 to 20 minutes or until muffins are golden.
Serve hot or cold with butter or dusted with icing sugar.

Honey Oat Bran and Date Muffins

1 cup plain flour
2 teaspoons baking powder
1 cup oat bran (I took normal bran)
½ cup chopped dates (I had a little more)
¼ cup honey
90 g butter
¾ cup natural yoghurt
1 egg, lightly beaten

Sift flour and baking powder into a bowl. Add bran and dates. Place honey and butter in a small pan and stir until melted. Mix yoghurt and egg together. Add honey and butter and mix into dry ingredients.
Spoon mixture into 12 buttered muffin pans to three-quarters full. Bake in a hot oven (200º C) for 15 to 20 minutes or until muffins are golden.
Serve hot or cold with butter.

Chocolate Chip Muffins

1¼ cups plain flour
¼ cup cocoa
2 teaspoons baking powder
one third cup brown sugar
100 g butter, melted
2 eggs, lightly beaten
½ cup milk
1 cup white or dark Chocolate Bits (I took the whole package, which is 400 g)

Sift flour, cocoa, baking powder and sugar into a bowl
Combine melted butter, eggs and milk and stir into dry ingredients with chocolate bits.
Spoon mixture into 12 buttered muffin pans to three-quarters full. Bake in a hot oven (200º C) for 15 to 20 minutes or until cooked through.
Serve hot or cold.
